I love making my own salad dressings- I can better control the nutritional value and make something way more delicious. If you are a recipe stickler, you’re going to hate these “recipes” if you can even call them that. They both make 1 or 2 ish servings. I usually pour all the ingredients into a ziplock Baggie to mix it and then throw it in my lunch box. Hah here they are!
1. Light & Sweet Lemon Dressing
1 1/2 tablespoons extra virgin olive oil
1 Honey Stick (like these ones) (or just a squirt of honey)
Juice from one lemon slice
Combine all ingredients in a bowl and whisk with a fork until combined. Add salt & pepper, if you’re into that.
2. Creamy Garlic Dressing
1 1/2 tablespoons low fat plain yogurt
1/2 tablespoon extra virgin olive oil
1/2 clove of garlic, finely chopped (less or more to taste!)
Squirt of lemon
Combine the yogurt & olive oil. Add in the garlic. Squirt the lemon into the bowl. If you can, make this the night before to get the garlic flavor to really take hold.
There is soooo much room for customization with these! I’ve made the first one with juice from a blood orange or a grapefruit. You could use Greek yogurt for the second one, if that’s what you have. I also like to sneak in some ground flax seed for some extra fiber. You could use coconut oil or another kind of oil that you’re into that!
